Blanched almond flour: The key ingredient in our vegan almond flour cookies. This gluten-free flour provides a delicious, nutty flavor and creates a wonderfully chewy texture. It is also packed with protein and fiber, making these cookies a healthier dessert option.

Maple syrup: This natural sweetener brings a hint of maple flavor to these cookies, enhancing their overall taste. It also adds moisture to the dough, contributing to the chewy texture of the cookies.

Ripe banana: The ripe banana acts as a binder in this recipe, replacing eggs to keep it vegan. The banana also imparts a subtle fruity flavor to the cookies and adds natural sweetness.

Powdered sugar: Used in the optional sugar-lemon glaze, powdered sugar gives a sweet finish to these cookies. If you're cutting down on sugar, feel free to omit this ingredient.

Lemon or lime juice: This ingredient is used in the optional glaze, adding a tangy contrast to the sweetness of the cookies. It also helps to thin out the powdered sugar, creating a drizzle-able consistency for the glaze.

Tips For Making the Best Vegan Almond Flour Cookies

Use ripe bananas: For the best flavor and texture, make sure to use ripe bananas in your cookie dough. Ripe bananas will provide natural sweetness and a soft, chewy texture to your vegan almond flour cookies.

Freeze your cookie dough: To make the dough easier to handle and shape, freeze it for about thirty minutes before rolling it out. This will prevent it from sticking to your hands or the rolling pin.

Roll dough between parchment paper: Instead of dusting your table with flour, roll the dough between two sheets of parchment paper. This will prevent the dough from sticking to the surface and make the rolling process much easier.

Use a light touch when rolling: Since the dough may be slightly sticky, apply light pressure when rolling it out. This will prevent the dough from tearing or becoming too thin.

Glaze is optional: The sugar-lemon glaze adds a nice flavor to the cookies, but it is completely optional. If you're watching your sugar intake, you can omit the glaze and still enjoy delicious cookies.

Frequently Asked Questions

Can I make substitutions in this vegan almond flour cookies recipe?

Yes, you can. If you don't have a banana, you can substitute it with about a half cup of applesauce. However, you'll need to increase the amount of almond flour to three and three-quarter cups to maintain the right texture.

Is the sugar-lemon glaze necessary?

No, it is not. The sugar-lemon glaze is optional and can be omitted, especially if you're trying to reduce sugar in your diet. Without the glaze, these cookies are still flavorful and delicious due to the natural sweetness from the banana and maple syrup.

What if I don't have parchment paper?

If you don't have parchment paper, you can lightly grease your baking sheet or tray with a bit of oil or use a silicone baking mat. This prevents the cookies from sticking to the tray during baking.

How to Store Leftover Vegan Almond Flour Cookies

If you have leftover cookies, don't worry! You can store them in an airtight container and store them at room temperature. They will stay fresh and delicious for up to ten days.

If you want to store your cookies for a longer period, you can freeze them. Place your cookies in a freezer-safe bag or container, making sure each cookie is separated by a piece of parchment paper to prevent them from sticking together.

They can be stored in the freezer for up to six months. When you're ready to enjoy them, simply take them out and let them thaw at room temperature.

Notes

Sweetness. This recipe contains only 3 tablespoons of Maple syrup, so the cookies will only be slightly sweet, which compensates for the sweetness of the sugar-lemon glaze that you dip the cookies into at the end.

If you're not going to use the glaze, feel free to increase the amount of Maple syrup to 4-5 tbsp. If you do this, you'll also need to increase the amount of almond flour. Add an additional ¼ cup of flour to the dough. The dough will be sticky, but you'll be able to shape it into a ball.

Shaping the dough into a ball. Depending on the size of the banana, you might need to use more almond flour. The dough is supposed to be sticky, but if it's too hard to shape it into a ball, add an additional ¼ cup of almond flour.

Rolling the dough. Freezing the dough for 30 minutes will make it easier to roll out. There's no need to dust a table with flour, but I found that it's easier to roll the dough in between two sheets of parchment paper.

Also, use a light touch when rolling the dough. Since it'll probably be slightly sticky, apply a light pressure to a rolling pin.

Add-ons. If you have a sweet tooth, add half a cup of dairy-free chocolate chips to the cookie dough. The melted chocolate adds a delightful sweetness and compliments the almond flavor of the cookies.

For a crunchier texture, add a handful of chopped almonds to the dough. The almonds not only add a wonderful crunch but also enhance the overall flavor of the cookies. Just make sure to adjust the almond flour to maintain the dough consistency.

Storage. Add the almond cookies to an airtight container and store them at room temperature. They will stay fresh and delicious for up to ten days.

Freezing. If you want to store your cookies for a longer period of time, you can freeze them. Place your cookies in a freezer-safe bag or container, making sure each cookie is separated by a piece of parchment paper to prevent them from sticking together.

They can be stored in the freezer for up to six months. When you're ready to enjoy them, simply take them out and let them thaw at room temperature.
