This fun monster energy bites recipe is quick & easy to make, nut free, gluten free, dairy free & vegan, perfect for healthy kids snacks & lunch boxes!

Today I'm sharing my super easy but very cute monster energy bites recipe.

I've tweaked my nut free fruity flapjack energy bites recipe and made them extra fun by turning the energy bites into cute little monsters!

I used my pretty homemade rainbow sprinkles to coat the monster energy bites, but if you're short on time or prefer to avoid food colouring, you can also use plain desiccated coconut instead.

The recipe is nut free, dairy free, gluten free (if you use gluten free oats) and vegan, so it make a great treat for those with allergies and dietary restrictions.

These fun energy bites are perfect for popping into school lunch boxes or packing for a healthy snack, (with or without the eyes!) even if your child attends a nut free school.

Ingredients:

  • 125g oats
  • 100g dried apple rings
  • 100g dried apricots
  • 75g raisins
  • 2 tbs maple syrup
  • ¼ tsp mixed spice
  • 50ghomemade coconut sprinklesordesiccated coconut
  • Googly Eye Bento Picks

Method:

Place the oats into a high speed blender (I used myVitamx, which made a very smooth mixture) then roughly chop the apple rings and dried apricots and pop in on top.

Whizz together until finely chopped, then add the raisins, maple syrup and the mixed spice.

Continue to whizz together until finely chopped and well combined. You might need to scrape the sides down a few times before the mixture comes together.

Turn the mixture out into bowl, then take walnut sized pieces of the mixture and roll it into balls.

Roll each ball in the coconut sprinkles or desiccated coconut to coat then place on a small baking tray or plate.

Pop into the fridge for 15 minutes or so to set, then store in an airtight container in the fridge.

Just before serving, add googly eye bento picks to turn them into fun monsters!

These energy balls should last for at least 5 days, though ours tend to get eaten quickly so never survive beyond a day or two!

Notes

These energy balls should last for at least 5 days. Use gluten free oats to keep this recipe gluten free.

    These look so good! Can you tell me what's in the "mixed spice?" I'm in the US and I'm wondering if it's like what we call Pumpkin Pie Spice. Thanks!

      Hi Michelle, Thank you! The brand I used has the following: Ground Cinnamon (Cassia) (40%), Ground Coriander (38%), Caraway, Nutmeg (4%), Ginger, Cloves. After a bit of googling it looks like it's very similar to pumpkin pie spice, so now I've solved that mystery for myself too! I'm sure it would work just as well.
